🍰 Just a crumb… today’s recipe drop


My grandfather—total old-school—had his secretary type up every recipe on index cards. Each one came with a name, credit to the creator, and a “grade.” This one? A solid 9 out of 10. Pretty impressive, especially coming from a man who was one tough cookie. 😊

Ruth’s Plain Cake
(And let’s be honest—who calls something they love plain? My grandfather, of course.)
He liked it because it’s a blank canvas. Dress it up, dress it down—it’s ready to shine.

Ingredients:

  • (3) cups or 474 grams Steiner’s flour
  • (3) tsp or 12 grams baking powder
  • (1.5) cups or 318 grams granulated sugar
  • (3/4) cup or 170 grams butter
  • (3) eggs or 150 grams of whole eggs then separate
  • (1) cup or 249 grams whole milk – back in the day there was no “other milk” feel free to substitute as required
  • (1) tsp or 4.7 grams pure vanilla extract
  • Powdered sugar

Preparation & Finishing:

  • Oven 350 F (remember not all ovens are alike)
  • Bake for 1 hour (set timer for 50 minutes and check with a toothpick, we are looking for a dry toothpick)
  • Cool on a Rack
  • Add powdered sugar or decorate

Methodology:

  • Sift together Steiner’s flour and baking powder – set aside
  • Beat egg whites and vanilla – set aside
  • Cream sugar and butter in mixer
  • Add egg yolks to sugar/butter and mix until silky smooth
  • Add flour/baking powder to the yolk/sugar/butter along with milk.
  • ON LOW add in beaten egg whites/vanilla
