Every so often, someone looks at our Blue Raspberry Coffee Cake and panics just a little.
âUh⌠is this mold?â
We get it. Blue-ish. Green-ish. Purple-y speckles in baked goods can feel⌠suspicious. But take a breath, superhero 𦸠â what youâre seeing is actually nature doing its thing.
Meet Anthocyanins (a.k.a. the Good Guys)
Those blue, green, and purple swirls?
They come from anthocyanins â naturally occurring plant pigments found in raspberries (and blueberries, blackberries, purple carrots⌠nature really showed off here).
Anthocyanins are a type of polyphenol (specifically a flavonoid, if you like your cake with a side of science). Theyâre responsible for the red, purple, blue â and yes, sometimes greenish-blue â hues you see in real fruit.
No dyes.
No artificial coloring.
No funny business.
Why the Color Shifts When We Bake
Hereâs the cool part:
Anthocyanins are pH-sensitive. When exposed to heat, acidity, and baking conditions, they naturally change color.
That means during baking they can show up as:
- Deep blue
- Blue-green
- Teal-ish
- Purple
- Or a mix of all of the above
In other words: if it looks a little unexpected, thatâs actually confirmation weâre using real fruit â not something engineered to stay one predictable shade.
Bonus: These Pigments Pull Their Weight
Anthocyanins arenât just pretty â theyâre powerful.
Research suggests they:
- Act as antioxidants
- Support anti-inflammatory processes
- May contribute to long-term cellular health
Is it still a coffee cake? Absolutely.
