Grandpa Malcolm’s Open Face Apple Cake
A classic with a wink, a whisper, and a whole lotta love.

Let me tell you something about Grandpa Malcolm: the man believed in two things — no shortcuts in life, and always using good butter. His open face apple cake was rated EXCELLENT on his recipe - with a note to try it with peaches. It was a go-to move for just about everything — new neighbors, old grudges, Tuesday night bridge, and more than one family peace treaty. It’s buttery, simple, wildly nostalgic, and the kind of dessert that doesn’t pretend to be something it’s not.

No fancy frostings. No hidden fillings. Just honest ingredients, a bold fruit-on-top moment, and a cake that says: “Yes, I’m that good.”

And let’s be clear — this is not a “throw it in a pan and hope for the best” situation. Grandpa Malcolm would tap the oven twice, give it a squint, and remind us: “Not all ovens are created equal. Don’t trust them. Trust the cake.” Wise words.

Use plums if you’re feeling European, apples if you’re feeling sentimental, and sprinkle cinnamon and sugar like you mean it.

By the time it’s done baking, the top’s all jammy and glistening, the edges golden, and the smell? Let’s just say your neighbors may show up “just passing by.” Cut it into 3” squares — but don’t expect them to last.

Ingredients:

  • (1) cup or 158 grams sifted Steiner’s flour
  • (1) tsp or 4 grams baking powder
  • (1/2) cup or 106 grams granulated sugar
  • (3/4) cup or 170 grams butter
  • (2) eggs or 100 grams of whole eggs
  • (1/4) tsp or 1.5 grams of salt
  • (8) large apples or plums - your preference 

Preparation & Finishing:

  • Oven 375 F (remember not all ovens are alike)
  • Bake for 30 minutes
  • Step down oven to 350 F and bake for 15 more minutes (remember not all ovens are alike - give it a quick checkin around the 8 minute mark)
  • Cut into (12) 3" squares

Methodology:

  • Sift together Steiner’s flour and baking powder – set aside
  • Slice fruit in even wedges - set aside
  • Cream sugar and butter in mixer
  • Add eggs - beat together well. 
  • Add flour/baking powder/salt to the egg/sugar/butter/flour.
  • Spread batter on greased 9" x 12" baking tin
  • Place fruit slices very close together on top of batter
  • If desired sprinkle generously with cinnamon, nutmeg and or sugar
