It’s no secret that Steiner’s Baking Co. was born from personal experience with the very condition we’re highlighting this month—Celiac disease. Our Creator-in-Chief, Nanci, was diagnosed long before gluten-free became a household term—long before most of you reading this were even born.

She’s heard every myth, seen every eye roll, and yes—she fully owns being a bit high-maintenance (think: that iconic “When Harry Met Sally” scene—written for her, honestly). But here’s the thing: celiac isn’t about preferences or trends. It's a serious autoimmune condition with more than enough facts to stand on its own.
