Crepes - Nanci's Way

Crepes are the very best vehicle to eat your favorite foods. Sweet, savory or sweet & savory. You cannot go wrong. They are delicious any way your stuff them! You cannot go wrong.

Ingredients

  • Eggs 2 LARGE (113.4 grams)
  • Granulated sugar 1 TBS (13.25 grams)
  • Steiner’s Flour 2 cups (316 grams)
  • Milk 1.5 – 2 cups (360 to 480 grams) (depends on the thickness you desire)
  • Oil (vegetable, canola) 1.5 TBS (19.45 grams)
  • Baking powder 2 tsp (8 grams)

Directions

1. Mix all ingredients in one bowl.

2. Feel free to mix in a splash of vanilla or a pinch of cinnamon for extra flavor.

3. Spray your pan or skillet with a non-stick product. You do not need to do this with a traditional crepe maker.

5. Cover the surface or the pan with batter thoroughly however not too thick. NOTE – this is NOT a pancake. It should be paper thin.

6. If you are using a crepe maker, dip the cooking surface into the batter so that the surface is coated evenly. Turn your crepe maker back over to complete the cooking process.
