Gluten-Free Pierogi Dough

Pierogies are the ultimate comfort food. Soft dough, cozy fillings, buttery finishes — basically a hug in dumpling form. And for far too long, gluten-free eaters have been forced to sit this one out.

Pierogi dough should roll easily, seal cleanly, and cook up tender — not crack, crumble, or behave like edible spackle. That’s exactly why our All-Purpose Flour works so beautifully here. Pro Tip:

Gluten-free dough loves rest and warmth. If your dough starts to crack while rolling, don’t panic — just knead it gently with slightly damp hands and let it sit for a minute. Steiner’s flour rehydrates quickly, and the dough will come right back to smooth and pliable.

Makes ~24 pierogies

Ingredients

  • Steiner’s All-Purpose Flour — 2 cups (316 g)
  • Salt — 1 tsp (6 g
  • Egg — 1 large (50 g)
  • Olive oil or melted butter — 2 tbsp (28 g)
  • Warm water — ¾ cup (180 g)

Directions

1. Make the dough
In a bowl, combine Steiner’s flour and salt. Add egg, oil, and warm water.
Mix until a soft dough forms.

2. Knead
Knead gently for 2–3 minutes until smooth.

3. Rest the dough
Cover and let rest 15 minutes.

4. Roll
Roll dough to about ⅛ inch thick on a lightly floured surface using Steiner’s flour.

5. Cut
Cut into 3-inch circles.

6. Fill and seal
Add about 1 tbsp filling (20–25 g). Fold and press edges firmly to seal.


Cooking Instructions

Boil in salted water until pierogies float (3–4 minutes), then optionally pan-fry in butter and onions until golden.


Steiner’s Dough Note

This dough should feel soft, flexible, and slightly springy — like fresh pasta dough.
If it feels dry, add 1 tsp (5 g) water at a time.
If sticky, dust lightly with Steiner’s flour.
